quick lavender sugar

one of my favorite ways to elevate an old recipe into a newer + fresher version is by changing up the flavor profile. the easiest way to change up the flavor profile is through spices, extracts and dried flowers.

lavender is one of those dried flowers/herbs that i used to shy away from, but now seem to find an excuse to use in everything! blending it into sugar made this once intimidating herb feel much more approachable (and adaptable). this blend imparts a wonderful fragrance and just a hint of lavender to your baked goods and drinks. my favorite pairings of the moment are with strawberries or with chocolate (see the spring/summer 2019 issue for lavender brownies….they are so good).

you ready for the simplest recipe ever?

you can’t get any simpler than this, guys. all you need to make this most delicious sugar is:

place lavender buds into food processor, process for 3-5 seconds. add sugar and process for 15-20 seconds. you can go longer (around 30-40 seconds) if you’re aiming for a super fine, caster like sugar and if you wanted, you could also make a powdered sugar. its really all up to you! taste the sugar as is and adjust as needed, but i’ve found this ratio to be a good balance of flavors without being too strong. store sugar in an airtight container at room temperature.
