Applesauce Oatmeal Cookies

Applesauce oatmeal cookies are soft, fluffy and cake like cookies made with applesauce and oatmeal. These applesauce cookies are easy to make and are a lovely fall cookie.

In a large mixing bowl whisk the flour, oats, baking soda, cinnamon and salt until well combined.

Step 1:  

In the bowl of a stand mixer fitted with paddle attachment, cream together the cubes of butter and light brown sugar on medium speed for 2 - 3 minutes.

Step 2:  

On low, cream in the egg, applesauce and vanilla extract until smooth and well combined.

Step 3:  

Mix the dry ingredients into the wet until just combined. Scoop the cookie dough into tablespoon sized cookie balls, cover the cookie dough and transfer to the fridge to chill for 1 - 2 hours.

Step 4:  

Preheat the oven to 375 F (190 C) for about 20-30 minutes before baking the cookies. Line a large baking sheet with parchment paper. Place the applesauce oatmeal cookie dough balls onto the lined baking sheet about 3 inches (8 cm) apart.

Step 5:  

Bake at 375 F (190 C) for 12 - 14 minutes or until the edges of the cookies are set and the centers are slightly puffed.

Step 6:  

Cool the fluffy applesauce cookies on the baking sheet for 5 minutes. Then transfer to a cooling rack to cool completely to room temperature.
