Lemon Lavender Cookie Bars
Buttery, chewy lemon and lavender shortbread cookie that's topped with a lemon glaze. They're sweet, tart and full of lemon flavor with just a hint of floral lavender.
Cream together butter, lavender sugar, lemon zest an egg yolk, lemon and vanilla extract until smooth and well combined.
Mix in all purpose flour and almond flour until smooth and just combined.
Evenly press the dough into an 8x8 (20 cm) pan.
Bake at 350 F / 177 C for
25 - 30 minutes. Cool in the pan for 30 minutes. Once cooled, cut into bars.
While the cookie bars cool, make the lemon glaze. Mix lemon juice and powdered sugar together until fully combined.
Pour the lemon glaze on top of the warm cookie bars while still in the pan. Allow 60 - 90 minutes for the glaze to set.
Remove the cookies from the pan using the excess parchment paper.
Slice along the precut lines and enjoy!
