Lemon Lavender Cookie Bars

Buttery, chewy lemon and lavender shortbread cookie that's topped with a lemon glaze. They're sweet, tart and full of lemon flavor with just a hint of floral lavender.

Cream together butter, lavender sugar, lemon zest an egg yolk, lemon and vanilla extract until smooth and well combined. 

Step 1:  

Mix in all purpose flour and almond flour until smooth and just combined.  Evenly press the dough into an 8x8 (20 cm) pan. 

Step 2:  

Bake at 350 F / 177 C for  25 - 30 minutes. Cool in the pan for 30 minutes. Once cooled, cut into bars.

Step 3:  

While the cookie bars cool, make the lemon glaze. Mix lemon juice and powdered sugar together until fully combined. 

Step 4:  

Pour the lemon glaze on top of the warm cookie bars while still in the pan. Allow 60 - 90 minutes for the glaze to set. 

Step 5:  

Remove the cookies from the pan using the excess parchment paper. 

Step 6:  

Slice along the precut lines and enjoy!
