Nutella Stuffed Cookies

Nutella cookies are soft, thick and chewy cookies made filled with rich and creamy Nutella. These stuffed cookies are easy to make in a few simple steps with a short chill time.

Scoop about 2 teaspoons dollops of Nutella onto the lined baking sheet or plate. Transfer the Nutella to the freezer to chill for 30 - 45 minutes.

Step 1:  

In a mixing bowl whisk together the flour, baking soda, baking powder, cornstarch and salt until well combined.

Step 2:  

In the bowl of a stand mixer fitted with paddle attachment, cream together the room temperature butter, the light brown sugar and granulated sugar. Mix on medium speed for 2 - 3 minutes or until the butter and sugars are well combined. On low, cream in the eggs and vanilla extract until well combined.

Step 3:  

Mix the dry ingredients into the wet until just combined. Gently fold in the chopped chocolate. Cover the cookie dough and transfer to the fridge to chill for 30 - 60 minutes. Preheat the oven to 375 F for about 30 minutes before baking the cookies. Line a large baking sheet with parchment paper.

Step 4:  

Use a cookie scoop to scoop the dough. Stuff a frozen dollop of Nutella into the dough. Cover the Nutella with excess dough the roll into a cookie ball. Place 6 large cookie balls onto a lined baking sheet. 

Step 5:  

Bake at 375 F (190 C) for 12 - 14 minutes until the edges and tops of the cookies are set.

Step 6:  

Cool the Nutella cookies on the baking sheet for 5 - 10 minutes. Then transfer to a cooling rack to cool completely to room temperature and enjoy.
