Apple Cider Cookies

Apple cider cookies taste like apple cider donuts in cookie form. They’re soft and chewy sugar cookies, coated in apple cider butter and cinnamon suga, topped with an apple cider glaze.

Reduce 2 cups apple cider to 1/4 cup by simmering over medium-high heat for 20 minutes. Make the brown butter and cool for 30 minutes. 

Step 1:  

In another bowl whisk together the flour, baking powder, baking soda, cornstarch, ground spices and salt until well combined.

Step 2:  

In a large mixing bowl, whisk in the cooled browned butter with the light brown and granulated sugars until well combined. Whisk in the egg, egg yolk, apple cider and vanilla extract until smooth and well combined.

Step 3:  

Stir the dry ingredients into the wet until just combined.  Preheat the oven to 375 F (190 C) for about 30 minutes before baking the cookies.

Step 4:  

Scoop the cookies and Bake at 375 F (190 C) for 9 - 1b minutes or until the edges of the cookies are set and the centers are slightly puffed. Cool 5 minutes and transfer to a cooling rack. 

Step 5:  

Make the apple cider butter and cinnamon sugar. Brush the tops of the cookies with the apple cider butter. Coat the cookies in the cinnamon sugar. 

Step 6:  

Make the apple cider glaze and drizzle on the coated apple cider cookies.
