Chocolate Covered Rice Krispie Treats

These chocolate covered Rice Krispie Treats are simple, delicious and beautiful no bake treats. They are made from buttery, marshmallow filled krispie cereal bars topped with a melted chocolate layer, swirled with melted caramel chip candy.

Line a 9x9 pan with parchment paper.  Make the brown butter by melting butter in a pot. Gently cook the butter for 7-10 minutes until brown bits form at the bottom of the pot. 

Step 1:  

Once all the butter has melted (or browned), add in the mini marshmallows. Stir continuously over low heat until the marshmallows are mostly melted.

Step 2:  

Once the marshmallows are mostly melted, remove the pot from the heat. Stir in the vanilla extract and the rice crispy cereal. Quickly and carefully stir in the cereal.

Step 3:  

Evenly scoop the soft and gooey treats into a lined 9 x 9 pan. Gently press the rice crispy treats into place.

Step 4:  

In a microwave safe bowl, melt the chocolate chips with 2 teaspoons of butter. Evenly pour and smooth the melted chocolate on top of the rice krispie treats.

Step 5:  

In another bowl, melt the caramel chips. Drop even dollops of melted caramel chips on top of the chocolate layer. Using a tooth pick or small knife, swirl the caramel chips into a decorative pattern.

Step 6:  

Allow the rice crispy bars with chocolate to set for at least 30 minutes or until the chocolate has hardened. Slice and enjoy.
