Why Should You Make This Recipe

I have several fun and creative marshmallow treat recipes on the blog. My personal favorites at the moment are my Maple Tahini Rice Krispie Treats and Cinnamon Toast Crunch Bars. These chocolate covered rice krispies are another fun twist on the classic no rice crispy bars you know and love. I know you’ll love this chocolate covered version because: 

  • They are quick, easy and fun to make. There’s nothing better than satisfying a dessert or snack craving as soon as possible with ingredients you already have on hand. These chocolate covered rice krispie treats are made using the same ingredients as regular rice krispie treats with chocolate on top. They take about 10 minutes to make and 30 minutes to set. 
  • They’re a delicious and beautiful no bake dessert. Dip these rice krispie bars in chocolate and top with any candy or sprinkles you like. They are the perfect no bake dessert for any occasion.

Ingredients

This decorated rice krispie treats recipe requires only a handful of ingredients to make and you probably already have them in your house! Before I show you how to make chocolate dipped rice crispy treats, make sure you have these ingredients ready to go!

The main ingredients for chocolate rice krispie treats are rice krispie cereal,, butter, mini marshmallows, vanilla extract, salt semi sweet or dark chocolate chips and caramel chips for topping.

Ingredient Substitutions 

These rice krispie treats covered in chocolate are meant to be quick and easy, but sometimes you may not have everything on hand. If you need them, here are my recommended substitutions for this recipe:

  • Unsalted Butter: You can use the same amount of salted butter as written in the recipe.
  • Rice Krispie cereal: Feel free to use any rice cereal you like. Chocolate rice krispie cereal would be a delicious substitute. 
  • Vanilla extract: This adds a lovely background flavor to the marshmallow treats. It’s highly recommended to use this, but it can be omitted if needed. 
  • Mini Marshmallows: This recipe for fruity pebbles treats uses exactly one 10 oz. bag of mini marshmallows. Feel free to use regular marshmallows if needed. 
  • Semi Sweet Chocolate Chips: I love using semi sweet chocolate chips for this recipe, but feel free to use milk or dark chocolate chips.
  • Caramel Chips: I like using the caramel chips from Trader Joes. You can order these vegan ones or use butterscotch chips.

Variations

  • Chocolate Dipped with Candies: Slice the set rice krispie treats into your desired shape and size. Push a straw or popsicle stick into one side. Melt the chocolate and dip the sliced rice krispie treats into the chocolate. Let the chocolate set for 10 minutes. Press candies into the soft chocolate. Allow the chocolate dipped treats to set for 1-2 hours. 
  • Bite Sized Chocolate Covered Rice Krispie Treats: Prepare the treats according to the recipe through step 5. Set the treats for 30 minutes. Slice the crispy treats into 1 inch pieces. Dip the treats into the melted chocolate until completely covered. Top with sprinkles. 
  • Peanut Butter Chocolate Covered Treats: Stir in ½ cup peanut butter after melting the marshmallows and before stirring in the cereal. Follow the rest of the recipe as written.

How To Make

Let me show you just how easy it is to make the best chocolate covered rice krispies treats:

  1. In a large sauce pan or pot, melt the butter on low heat. To turn this into brown butter, allow the melted butter to begin to foam. Once it starts to foam, whisk or stir the liquid butter frequently. The butter will begin to smell nutty and very fragrant. Once the foam has subsided, the butter should have some brown, lightly toasted bits floating at the bottom. 
  2. Once all the butter has melted (or browned), add in the mini marshmallows. Stir continuously over low heat until the marshmallows are mostly melted.
  3. Once the marshmallows are mostly melted remove the pot from the heat. Stir in the vanilla extract and the rice crispy cereal. Quickly and carefully stir in the cereal.
  1. Evenly scoop the soft and gooey treats into a lined 9 x 9 pan. Gently press the rice crispy treats into place.
  2. In a microwave safe bowl, melt the chocolate chips with 2 teaspoons of butter in 20 second increments until fully melted, stirring in between each increment. Evenly pour and smooth the melted chocolate on top of the rice krispie treats. 
  3. In another bowl, melt the caramel chips in 15 second increments until melted. Make sure to gently stir before heating again. Drop even dollops of melted caramel chips on top of the chocolate layer. Using a tooth pick or small knife, swirl the caramel chips into a decorative pattern.  
  4. Allow the rice crispy bars with chocolate to set for at least 30 minutes or until the chocolate has hardened. Slice and enjoy.

How To Store

To store leftover marshmallow treats: These choc covered rice krispie treats store well in an airtight container at room temperature for up to one week.

M’s Expert Tips

  • Gently melt the marshmallows in the butter over medium - low heat. Stir frequently and just until the marshmallows and butter form a smooth mixture. Avoid the temptation to over mix or rush this process. Doing so can create hard marshmallow treats. 
  • Lightly grease the pan with cooking spray or butter before transferring cereal and marshmallow mixture into the pan. Press the mixture gently into the pan. This needs to be just enough to get them to stick together.
  • Don’t add anything to the caramel chips before melting. Like white chocolate, caramel chips will seize if anything is added to them while melting. 
  • For thinner treats, use a 9x13 pan.

They last 5-7 days when stored in an airtight container.

Can I make my Chocolate Covered Rice Krispie Treats harden faster?

To set rice krispie treats faster, cool them in the fridge (in the pan) for 30 minutes.

Why are my chocolate dipped treats hard as a rock?

This typically happens when the marshmallows are melted quickly over high heat or when left on the heat source too long. Melt the marshmallows low, slow and only as long as needed for the marshmallows to fully melt.

Ingredients
  

  • 6 tbsp (85 g) unsalted butter
  • 6 cups (10 oz, 283 g) mini marshmallows
  • 1 tsp (5 ml) vanilla extract
  • 6 cups (162 g) Rice Krispie Cereal
  • 2 cups (340 g) chocolate chips
  • 2 tsp unsalted butter
  • ½ cup (70 g) salted caramel chips

Instructions
 

  • In a large sauce pan or pot, melt the butter on low heat. To turn this into brown butter, allow the melted butter to begin to foam. Once the foam has subsided, the butter should have some brown, lightly toasted bits floating at the bottom.

  • Once the marshmallows are mostly melted, remove the pot from the heat. Stir in the vanilla extract and the rice crispy cereal. Quickly and carefully stir in the cereal. Stir the rice krispie cereal in the gooey melted marshmallows until all the cereal pieces are fully coated.
  • Evenly scoop the soft and gooey treats into a lined 9 x 9 pan. Gently press the rice crispy treats into place.
  • In a microwave safe bowl, melt the chocolate chips with 2 teaspoons of butter in 20 second increments until fully melted, stirring in between each increment. Evenly pour and smooth the melted chocolate on top of the rice krispie treats.
