Chocolate Covered Blueberries

Chocolate covered blueberries are a quick, easy and healthy dessert or snack made using fresh or freeze dried blueberries coated in dark chocolate.

Pour the dark or milk chocolate and coconut oil into a large microwave safe bowl. Heat in 30 second increments in the microwave until the chocolate is fully melted. Stir the chocolate in between each increment.

Step 1:

Once the chocolate has melted pour the clean and dried blueberries into the melted chocolate. Gently mix the berries in the chocolate until all the berries are fully coated in the melted dark or milk chocolate.

Step 2:

Use a small, tablespoon sized cookie scoop or spoon to transfer clusters of chocolate covered blueberries onto a lined baking sheet or plate. If you prefer to have individual blueberries coated in chocolate, simply scoop one berry at a time onto a line baking sheet or plate.

Step 3:

Transfer the chocolate covered blueberry clusters to the fridge or freezer to set. The blueberry chocolates need about 15 minutes to set in the freezer and 30 minutes to set in the fridge.

Step 4:

Open the package of freeze dried blueberries. Remove the silica packet (this absorbs moisture and keeps the freeze dried berries crisp). Once the chocolate has melted pour the freeze dried blueberries into the melted chocolate.

Step 5:

Gently mix the freeze dried berries in the chocolate until all the berries are fully coated in the melted dark or milk chocolate. Use a small, tablespoon sized cookie scoop or spoon to transfer clusters of chocolate covered blueberries onto a lined baking sheet or plate.

Step 6:

Transfer the chocolate covered blueberry clusters to the fridge or freezer to set. The blueberry chocolates need about 15 minutes to set in the freezer and 30 minutes to set in the fridge.
