Chocolate covered pineapple are is an easy and healthy dessert or snack made using fresh pineapple chunks, spears or rings dipped in your favorite chocolate.
If you’re using frozen pineapple, thaw the pineapple slightly for a few minutes at room temperature. Pat the slightly thawed pineapple with a paper towel before covering with chocolate.
Line a sheet pan with parchment paper or wax paper and set aside for now. Pour the dark, milk or white chocolate and coconut oil (if using) into a large microwave safe bowl.
Dip each of the pineapple chunks, slices or rings into the melted chocolate until both sides are coated in the melted chocolate. Place the chocolate coated pineapples onto the prepared baking sheet. Top with your preferred toppings.
Chill the dipped pineapple in the fridge for about an hour or in the freezer for about 30 - 45 minutes. The chocolate will set at room temperature as well, but it takes longer.
