Strawberry Tiramisu

Strawberry tiramisu is a light and refreshing no bake dessert made with ladyfingers dipped in strawberry syrup, layered with creamy mascarpone filling and fresh sliced strawberries.

Prepare the strawberry syrup. Whisk the seedless strawberry jam, orange juice and water together to form a thin strawberry sauce.

Step 1:  

In a mixing bowl fitted with whisk attachment, whip the heavy cream and ¼ cup powdered sugar to medium-stiff peaks.

Step 2:  

Transfer the whip cream to another bowl or use another mixing bowl to prepare the mascarpone filling.

Step 3:  

Switch to a paddle attachment. Cream the mascarpone cheese on low until very smooth. Scrape the bowl and repeat mixing as needed until the mascarpone is smooth across the bottom of the mixing bowl.

Step 4:  

On low, cream in the remaining powdered sugar and vanilla until well combined. Scrape sides and bottom of the bowl again. Fold in the whipped cream until smooth and well combined.

Step 5:  

To assemble the strawberry tiramisu, dip both sides of one ladyfinger cookie at a time into the strawberry sauce or syrup. Place each strawberry dipped ladyfinger in single layer across the bottom of the dish. Top the ladyfinger layer with ½ of the mascarpone layer. Top the mascarpone layer with 1 cup sliced or diced strawberries.

Step 6:  

Finish by topping the ladyfingers with the remaining mascarpone filling. Cover the entire dish and chill in the fridge for at least 6 hours, but preferably overnight. When it’s time to serve the tiramisu with strawberries, add another layer of fresh strawberries, dust the top with powdered sugar, slice and serve.
