2 ingredient pumpkin bread is a quick, effortlessly easy and delicious pumpkin bread made with spice cake mix and pumpkin puree. This simple, one bowl pumpkin bread with cake mix makes the perfect fall treat.

  • 1 9X5 loaf pan
  • 1 sheet parchment paper
  • 1 mixing bowl

Ingredients
  

  • 1 15.25 oz. box spiced cake mix
  • 1 15 oz. can pumpkin puree

Instructions
 

  • Preheat the oven to 350 F (170 C). Line a 9 x 5 loaf pan with parchment paper, leaving a bit of overhang on two sides. 
  • In a large bowl, add a full can of pumpkin puree. Whisk the dry spice cake ingredients into the pumpkin puree until mostly smooth. A few small lumps are fine.

  • Pour the pumpkin cake mix batter into the prepared loaf pan.Bake the easy cake mix pumpkin loaf for 45 - 50 minutes or until a toothpick inserted into the center of the loaf comes out with a few moist crumbs. The edges of the bread will also pull slightly away from the edges of the pan. 
  • Cool the pumpkin cake mix bread in the loaf pan for 15 minutes. Use the parchment sling to lift the bread out of the pan. All the pumpkin bread to full cool at room temperature for about an hour before slicing.
    If you like, dust with powdered sugar or top with a quick and easy maple glaze.

Notes

Store: Place the two ingredient pumpkin loaf in an airtight container in the fridge for 4 - 5 days.
