Apple Cinnamon Pancakes Recipe

Apple cinnamon pancakes are light and fluffy pancakes made with tart grated apples. Top these melt in your mouth apple pancakes with an easy to make maple glazed, cinnamon spiced apple topping. These cinnamon apple pancakes make the best pancakes for a cozy and indulgent fall breakfast everyone will love.

Equipment

  • 1 ¼ cup measuring cup optional
  • 1 knife
  • 1 sauce pan or small pot

Ingredients
  

Apple Cinnamon Pancakes

  • 2 cups (240 g) all purpose flour
  • ¼ cup (50 g) sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ¼ cup (60 ml) oil
  • cups (300 ml) milk
  • 1 medium apple, peeled, cored and shredded

Apple Topping for Pancakes

  • 2 apples, peeled, cored and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons (25 g) sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup (60 ml) maple syrup

Instructions
 

  • In a mixing bowl, whisk the flour, sugar, ground cinnamon, baking powder, baking soda and salt together until well combined. Set aside.

  • In another bowl, whisk the eggs until smooth. Whisk in the oil and milk together until smooth and well combined. Whisk in the wet ingredients with the dry until just combined with some lumps. Fold in the shredded apples. Do not overmix the pancake batter.
    2 large eggs, ¼ cup (60 ml) oil , 1½ cups (300 ml) milk , 1 medium apple, peeled, cored and shredded
  • Heat a non stick skillet or griddle to low- medium heat while the batter rests for a few minutes. Drop a small amount of pancake batter onto the pre-heated skillet to test if the skillet is ready. In a pre-heated non stick skillet or griddle, melt some butter, coconut oil or other oil on the skillet. 
  • Using a ¼ cup (59 ml) measuring cup, drop the thick and creamy apple batter onto the hot skillet. When bubbles start to form, pop and stay on surface of the pancake, it’s time to flip. This takes about 3 - 4  minutes. Flip the pancakes and cook for an additional 2 -3 minutes.
    Transfer the pancakes to a cooling rack or plate. Continue cooking the pancakes until all the batter is used. Serve as soon as possible. I like topping my fluffy homemade apple pancakes with a sauteed apple topping. 
  • Peel, core and dice 2 apples. Add the apples, butter, sugar and cinnamon to a sauce pan or small pot. Stir well to combined and cook the apples over medium heat for 3 - 5 minutes or until your desired softness. Remove the apples from the heat and stir in the maple syrup.

  • Top the cinnamon apple pancakes with the apple topping, more maple syrup and serve.

Notes

Serve: Pancakes are the perfect dish to use any toppings you like. They would be especially delicious with the suggested sauteed apples. If you prefer a similar topping, try my air fryer apples. Powdered sugar or more maple syrup would also be delicious. 
Store: Place the pancakes and apple topping in an airtight container for up to 1 week in the fridge. Although, these pancakes are best enjoyed the same day or kept frozen to enjoy at a later date.
