Apple fritter bread is a soft, moist and flavor packed apple quick bread with brown sugar cinnamon apples swirled throughout. The spiced apple fritter topping is also swirled on the apple bread giving you cozy, caramelized apple chunks in every bite. Make this Amish apple bread truly decadent by topping it with an easy vanilla bean glaze.

Ingredients
  

Apple Fritter Filling

  • 2 cups peeled and diced apples about 3 medium apples
  • ½ cup (100 g) light brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger or nutmeg

Apple Fritter Bread

  • cup (180 g) all purpose flour
  • teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (113 g) unsalted butter, room temperature
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs (US), room temperature
  • 2 teaspoons (10 ml) vanilla extract
  • ¼ cup (60 g) sour cream, room temperature
  • ¼ cup (59 ml) milk, room temperature

Vanilla Bean Glaze

  • 1 cup (120 g) powdered sugar
  • ¼ teaspoon vanilla bean paste or vanill extract
  • 2 - 3 tablespoons (30 - 45 ml) milk

Instructions
 

  • Preheat the oven to 350 F (170 C). Line a 9 x 5 loaf pan with parchment paper, leaving a bit of overhang on two sides. 
  • Peel, core and dice apples into ½ inch chunks. Toss the apples in a bowl with light brown sugar, cinnamon and ginger or nutmeg until all the apples are fully coated.

  • In a large bowl, whisk the flour, baking powder, baking soda and salt together until well combined.

  • In a large mixing bowl, cream the sugar and butter together until light and fluffy. This takes about 2-3 minutes on medium speed.
    On low, mix in the eggs, vanilla extract and sour cream until well combined.
    ½ cup (113 g) unsalted butter, room temperature, ¾ cup (150 g) granulated sugar, 2 large eggs (US), room temperature, 2 teaspoons (10 ml) vanilla extract , ¼ cup (60 g) sour cream, room temperature
  • Alternating dry ingredients and milk, mix in ½  of the dry ingredients into the wet, followed by the milk and the remaining dry ingredients.
    Fold in 1 ½ cups of the brown sugar cinnamon apples until just combined. Reserve the remaining apples for topping just before baking.
    ¼ cup (59 ml) milk, room temperature
  • Evenly spread the cinnamon apple bread batter into the prepared pan. Top with the reserved apple fritter topping. 
    Bake the fritter apple bread for 50 - 60 minutes or until a toothpick inserted into the center of the cinnamon apple bread comes out with a few moist crumbs.
  • Cool the cake in the loaf pan for 15 minutes. Use the parchment sling to lift the bread out of the pan. Cool completely before topping with the vanilla bean glaze. 
  • In a mixing bowl, whisk the powdered sugar with vanilla bean paste and milk to your desired consistency. Drizzle over the cooled apple fritter loaf, slice and enjoy!

Notes

To store leftover apple bread: Place slices of the apple fritter loaf in an airtight container at room temperature for up to 3 days. Then transfer the apple sour cream bread to the fridge for an additional 2 - 3 days.
