Mascarpone Frosting Recipe

Mascarpone frosting is a decadent, creamy and lusciously silky smooth frosting that’s perfect for topping cakes, cupcakes, brownies and cookies.  This mascarpone whipped cream frosting is made from 4 simple ingredients and is incredibly easy to make. Reach for this mascarpone icing the next time you need an incredibly delicious, but not too sweet frosting recipe.

Equipment

  • 1 stand mixer with whisk attachment or hand mixer with beaters

Ingredients
  

  • 8 oz. mascarpone cheese
  • 1 cup (120 g) powdered sugar
  • 2 teaspoons (10 ml) vanilla extract
  • 1 cup (237 ml) cold heavy cream

Instructions
 

  • Place a mixing bowl and whisk attachment in the fridge or freezer for about 15 - 20 minutes before making the frosting recipe.
  • On low, whisk the mascarpone cheese until smooth. Once smooth, mix in the vanilla extract and powdered sugar until well combined.
    8 oz. mascarpone cheese, 1 cup (120 g) powdered sugar, 2 teaspoons (10 ml) vanilla extract
  • Once all the sugar has been added, mix in the heavy cream slowly on low speed.
    Once all the heavy cream has been added, increase the mixer speed to medium for about 2 - 3 minutes or until the frosting is light and fluffy.
    1 cup (237 ml) cold heavy cream
  • Transfer the frosting to a storage container or use to top cakes, cupcakes, cookies or brownies.

Notes

Store: Mascarpone frosting is best used to frost the same day it is made. This mascarpone whipped cream frosting holds its shape well once piped onto cupcakes or layered onto a cake. Whether the frosting is stored in an airtight container or is used on a dessert, it must be stored in the fridge. Desserts like cake with mascarpone frosting can be left out in a cool room for up to two hours.
