Peanut butter oatmeal bars are thick, soft and chewy oatmeal filled with rich and creamy peanut butter, hearty oats and sweet chocolate chips. These oatmeal peanut butter bars are quick, easy to make and are the perfect treat.
1 stand mixer with paddle attachment or electric hand mixer with beaters
Ingredients
1cup (120 g)all purpose flour
1cup (86 g)old fashioned oats
½teaspoonbaking soda
¼teaspoonsalt
½cup (113 g)unsalted butter
½cup (100 g)light brown sugar
½cup (100 g)granulated sugar
¾cup (192 g)creamy peanut butter
1large egg, room temperature
1teaspoon vanilla extract
1cup (170 g)chocolate chips, optional
Instructions
Preheat the oven to 350 F (177 C). Lightly grease and line the bottom and two long sides of a 8 x 8 inch (20 cm) pan.
In a mixing bowl, whisk the flour, oats, baking soda and salt together until well combined.

In a small bowl, add tablespoon sized slices of butter. Heat the butter in the microwave for 45 seconds. The butter will be mostly melted with a few solid pieces in the melted butter. Transfer the partially melted butter to the bowl of a stand mixer.
½ cup (113 g) unsalted butter
In a mixing bowl fitted with paddle attachment, cream the butter with the light brown and granulated sugars until smooth and well combined. Add the creamy peanut butter and mix into the butter and sugars until smooth and well combined. On low, cream in the eggs and vanilla extract until smooth and well combined.
½ cup (100 g) light brown sugar, ½ cup (100 g) granulated sugar, ¾ cup (192 g) creamy peanut butter, 1 large egg, room temperature, 1 teaspoon vanilla extract , 1 cup (170 g) chocolate chips, optional
Stir the dry ingredients into the wet until just combined. I like to do this about ½ of the dry ingredients at a time. Fold in the chocolate chips. Press the peanut butter oat dough into the prepared pan. Use a flexible spatula to smooth the dough evenly across the pan. Top with the reserved chocolate chips.
Bake for about 20 - 25 minutes or until the edges of bars are a light golden brown, slightly puffed up and the edges are slightly pulled away from the sides of the pan. Cool the peanut butter oat bars in the hot pan until room temperature. This takes about 45 - 60 minutes. When the oatmeal bars have cooled long enough to transfer out of the pan without breaking, use the excess parchment paper on the long sides of the pan and gently lift the bars out of the pan and to cool on a cooling rack, then slice and enjoy.
Notes
Store: Place the peanut butter chocolate oatmeal bars in an airtight container. Store at room temperature for up to 5 days.
