Strawberry mousse is a creamy, light and fluffy no bake strawberry dessert made with 4 simple ingredients. This quick and easy strawberry mousse dessert is comes together in about 10 minutes and is the perfect make ahead dessert for any occasion.
1 stand mixer with whisk attachment or hand mixer with beaters
4 6 - 8 oz. cups or serving bowls
Ingredients
1pound fresh strawberries, divided cleaned, de-stemmed and halved
¼cup (50 g)granulated sugar
1½cups (360 ml)cold heavy cream
¼ - ½cup (30 - 60 g)powdered sugar
Instructions
Place ¾ pound of fresh, cleaned and de-stemmed strawberries, along with ¼ cup sugar into a food processor or blender. Pulse the strawberries and sugar to combine. Then process the berries into a puree consistency. If you would like a smooth strawberry puree, press the pureed strawberries through a mesh strainer. If you prefer to keep the seeds, skip this step.
Reserve ½ cup of the fresh strawberry puree for spooning into the serving cups. There should be about 1 cup strawberry puree left to mix into the whipped cream. You should also have about ¼ cup or 4 whole strawberries set aside to top the cups for serving.
Add the heavy cream and powdered sugar to a mixing bowl fitted with a whisk attachment. Combine the ingredients on low for 1 minute. Taste and add ¼ cup more powdered sugar if needed. Increase the speed of the mixer to medium speed. Mix for about 4 - 5 more minutes or until the cream has whipped to medium stiff peaks. Scoop out ½ cup of the whipped cream and set aside. This is for the optional whipped cream topping.
1½ cups (360 ml) cold heavy cream , ¼ - ½ cup (30 - 60 g) powdered sugar
With the mixer on low, add in the strawberry puree (not the ½ cup reserved for spooning into the serving cups). Mix on low to combine, then increase the speed to medium. Mix the strawberry puree and heavy cream to medium stuff peaks. You should now have ½ cup reserved strawberry puree, ½ cup reserved whipped cream and strawberry mousse.
To assemble the strawberry mousse dessert, grab (4) 6 - 8 oz. glasses. Add 2 tablespoons of reserved strawberry puree to the bottom of each cup. Top the strawberry puree with the strawberry mousse. There should be enough to fill the cups almost to the top. Top the strawberry mousse with the reserved whipped cream and a whole strawberry.
Loosely cover the top of the cups with plastic wrap. Transfer the strawberry dessert cups to the fridge to set first least 1 - 2 hours and up to overnight. Right before serving, lightly dust the tops of the cups with powdered sugar and enjoy.
Notes
Store: Make sure the cups are completely covered with plastic wrap. Store in the fridge for up to 1 - 2 days after making. This dessert tastes best up to 1 day after assembling the strawberry mousse cups.
