Strawberry oatmeal is a deliciously creamy stovetop oatmeal made with fresh sweet strawberries. Top this berry oatmeal with maple syrup, a drizzle of cream and more fresh strawberries for a quick, easy and healthy breakfast you will love.

Ingredients
  

  • 1 pound strawberries, divided
  • 1 cup (240 ml) milk
  • 1 cup (240 ml) water
  • 2 - 4 tablespoons (30 - 60 ml) maple syrup
  • cups (135 g) rolled or old fashioned oats
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 - 2 tablespoons (15 - 30 ml) cream, for topping
  • 1 - 2 tablespoons (15 - 30 ml) maple syrup, for topping

Instructions
 

  • Wash, pat dry and slice or chop the strawberries. Portion the strawberries out into 2 cups for making the strawberry milk, ½ cup for cooking into the oatmeal and ½ cup for topping.

  • Make the strawberry milk. Add 2 cups of prepared strawberries, milk, water and maple syrup into a high speed blender. Blend the ingredients together over medium or high speed until well smooth and combined with no strawberry lumps.

  • Pour the strawberry milk into a large pan or small pot, along with the oats, salt and vanilla extract. Stir everything together to incorporate and cook over medium heat for about 10 - 15 minutes, stirring frequently.
    Once the oatmeal has thickened, stir in ½ cup of chopped strawberries to the mostly cooked oatmeal. 
    1½ cups (135 g) rolled or old fashioned oats, 1 teaspoon vanilla extract , ¼ teaspoon salt
  • Evenly divide the strawberry oatmeal into two bowls. Top the oatmeal with your preferred toppings. I love adding a drizzle of cream or half and half, along with a drizzle of maple syrup and the reserved fresh strawberries.

Notes

Store: Place the strawberry oatmeal in an airtight container. Store in the fridge for up to 5 days.
