Almond Flour Mug Cake Recipe

Almond flour mug cake is a moist, rich, nutty and fluffy mug cake made with almond flour. This quick and easy gluten free mug cake takes 1- 2 minutes to mix and another minute to cook in the microwave for the perfect single serve dessert.

Equipment

  • 1 12 oz. mug
  • 1 microwave
  • 1 fork, spoon or tiny whisk

Ingredients
  

  • 1 tablespoon (15 ml) coconut oil
  • 1 large egg, room temperature
  • 2 tablespoons (30 ml) maple syrup
  • 1 teaspoon vanilla extract
  • tablespoons unsweetened or Dutch processed cocoa powder (5 teaspoons)
  • ½ teaspoon baking powder
  • teaspoon salt
  • ¼ cup (30 g) almond flour
  • 1 tablespoon chocolate chips, optional

Instructions
 

  • Grab your favorite mug. It should hold at least 12 oz. (360 ml) of liquid. 
    Place the coconut oil in the mug. Microwave the coconut oil until it’s melted, about 30 seconds in the microwave. If needed, heat again for 10 - 15 seconds until the coconut oil has melted.

  • Whisk in the egg until lightly beaten. Whisk in the maple syrup, and vanilla extract until well combined. Once the wet ingredients have been whisked in, stir in the cocoa powder, baking powder, salt and almond flour. If you would like, stir in 1 tablespoon chocolate chips as well.

  • Microwave the almond flour mug cake in the microwave for 60 - 90 seconds (1 - 1 ½ minutes). The mixture should puff up and resemble cake or fluffier brownie. If there is any liquid at the bottom or the almond cake seems underbaked, heat the mug cake in the microwave in additional 15 second increments until the cake is to your desired consistency.
  • Allow the mug cake to cool for 2 - 3 minutes. Top the cooled chocolate chips or fresh berries if you like and enjoy.

Notes

Serve: I love topping this easy almond flour chocolate mug cake with chocolate chips, whipped cream and fresh berries. 
Store: This mug cake recipe is designed to be single serve and to be eaten as soon as it is made. I do not recommend storing this almond chocolate mug cake in a mug as the texture changes over time.
