This almond flour cake in a mug is made from a handful of pantry basics. Here’s what you’ll need to make it.

Substitutions 

This almond flour brownie mug cake is meant to be quick and easy, but sometimes you may not have everything on hand. If you need them, here are my recommended substitutions for this recipe.

  • Coconut Oil: Feel free to use melted butter in place of the coconut oil. 
  • Maple Syrup:  Maple sugar would be good refined sugar free substitute. Use brown sugar or regular sugar if you like. 
  • Cocoa Powder: Any type of unsweetened cocoa powder will work well in this grain free mug cake recipe. However, I love using dutch process cocoa powder for its mellow, but intensely chocolate-y flavor.
  • Egg: The egg is an important part of this mug cake. To make this mug cake without egg, replace the egg with 4 tablespoons (45 ml) milk. The final texture will be denser than with an egg. 
  • Vanilla Extract: Adding a splash of vanilla extract really makes this mug cake with almond flour shine. 
  • Salt: A pinch of salt enhanced the flavors of the other ingredients.  
  • Baking Powder: This leavener is recommended for this mug cake. 
  • Almond Flour Mug Cake: Blanched almond flour is the correct almond flour to use in this recipe. If you would like to use almond meal, know that the texture of the mug cake will be coarser.

Variations

  • Vanilla Almond Flour Cake: To make this almond mug cake as a vanilla cake simply omit the cocoa powder and follow the rest of the recipe as written. 
  • Strawberry Almond Mug Cake: Add 2 - 3 tablespoons of fresh chopped strawberries to the mug cake after mixing the other ingredients together.

How To Make

Learn how to make almond flour mug cake in a few easy steps.

  1. Grab your favorite mug. It should hold at least 12 oz. (360 ml) of liquid. Place the coconut oil in the mug. Microwave the coconut oil until it’s melted, about 30 seconds in the microwave. If needed, heat again for 10 - 15 seconds until the coconut oil has melted.
  2. Whisk in the egg until lightly beaten. Whisk in the maple syrup, and vanilla extract until well combined. Once the wet ingredients have been whisked in, stir in the cocoa powder, baking powder and almond flour. If you would like, stir in 1 tablespoon chocolate chips as well.   
  3. Microwave the almond flour mug cake in the microwave for 60 - 90 seconds (1 - 1 ½ minutes). The mixture should puff up and resemble cake or fluffier brownie. If there is any liquid at the bottom or the almond cake seems underbaked, heat the mug cake in the microwave in additional 15 second increments until the cake is to your desired consistency. Allow the mug cake to cool for 2 - 3 minutes. Top the cooled chocolate chips or fresh berries if you like and enjoy.

  • Serve: I love topping this easy almond flour chocolate mug cake with chocolate chips, whipped cream and fresh berries. 
  • Store: This mug cake recipe is designed to be single serve and to be eaten as soon as it is made. I do not recommend storing this almond chocolate mug cake in a mug as the texture changes over time. It tastes so much better right after it is made.

M’s Expert Tips

  • Mix in the suggested order. After trying a few different ways, I found whisking or melting the coconut oil, then whisking in the egg, followed by the rest of the wet ingredients, then mixing in the dry was the best and easiest way to make this gooey almond meal mug cake. 
  • Mix the ingredients well. The almond flour cake batter should be similar to a regular cake batter before baking. 
  • Check the wattage on your microwave. If your microwave is below 1100, you may need to add 20 - 30 seconds. If your microwave is above 1100, you may need to start at 90 seconds and add 20 - 30 more seconds as needed. 
  • Top the mug cake with your favorite toppings. My favorite way to enjoy this mug cake is with chocolate chips or fresh berries.

  • 1 large egg, room temperature

  • 1½ tablespoons unsweetened or Dutch processed cocoa powder (5 teaspoons)
  • ½ teaspoon baking powder

    This is my go to breakfast! I use almond flavoring and top with walnuts and Cool Whip. I hate eggs, but this is one way I can get the protein from one.

    Amazing! This is the mug cake I never knew I needed. I added butter instead of coconut oil and I omitted the chips. Tasty and moist! I'll be making this again and again!
