Chocolate Covered Pineapple Recipe

Chocolate covered pineapple are is an easy and healthy dessert or snack made using fresh pineapple chunks, spears or rings dipped in your favorite chocolate. Skip the store bought version and learn how to make chocolate dipped pineapple in just a few minutes.

Equipment

  • 1 knife
  • paper towels
  • 1 small baking sheet or large plate
  • 1 sheet parchment or wax paper
  • 1 microwave safe bowl

Ingredients
  

  • 1 whole pinepple
  • 2 cups (12 oz.) dark chocolate chips or melting wafers
  • 1 teaspoon coconut oil, optional

Instructions
 

  • Using a sharp knife, slice the pineapple to remove the pointy outer layer. Slice the pineapple into rings, spears or chunks.

  • Place the sliced pineapple onto paper towels to soak up any excess liquid. If you’re using frozen pineapple, thaw the pineapple slightly for a few minutes at room temperature. Pat the slightly thawed pineapple with a paper towel before covering with chocolate. 
  • Line a sheet pan with parchment paper or wax paper and set aside for now. Pour the dark, milk or white chocolate and coconut oil (if using) into a large microwave safe bowl. Heat in 30 second increments in the microwave until the chocolate is fully melted. Stir the chocolate in between each increment.

  • Dip each of the pineapple chunks, slices or rings into the melted chocolate until both sides are coated in the melted chocolate. Place the chocolate coated pineapples onto the prepared baking sheet. Top with your preferred toppings.
  • Chill the dipped pineapple in the fridge for about an hour or in the freezer for about 30 - 45 minutes. The chocolate will set at room temperature as well, but it takes longer.

Notes

Store: Chocolate dipped pineapple is best enjoyed the same day it is made. Transfer leftover chocolate covered pineapples to an airtight container in the the fridge for up one 3 days. I do not recommend freezing and thawing the chocolate dipped pineapple.
