Substitutions
This vanilla and cinnamon sugar mug cake is meant to be quick and easy, but sometimes you may not have everything on hand. If you need them, here are my recommended substitutions for this recipe.
- Butter: I like to use unsalted “sweet cream” butter in almost all my baking recipes. This is the most common and widely available butter in the US. If needed, use salted butter or a diary free butter you like.
- Milk: Any type of milk will work well in this snickerdoodle cookie mug cake.
- Granulated Sugar: Maple sugar would be good refined sugar free substitute. Brown sugar works well and brings another layer of flavor to the mug cake.
- Vanilla Extract: Adding a splash of vanilla extract really makes this microwave snickerdoodle cake shine.

- Make the cinnamon sugar by mixing the sugar and ground cinnamon in a small bowl until well combined. Set aside for now.
- In another, microwave safe bowl, place the butter and pour the milk. Microwave the butter and milk until melted, about 30 seconds in the microwave. Stir the mixture to fully incorporate any unmelted pieces of butter. If needed, heat the mixture for another 10 - 15 seconds until the butter is fully melted. Whisk in the sugar, ground cinnamon and baking powder until well combined. Whisk in the flour until just combined.

3. Grab your favorite mug. It should hold at least 10 - 12 oz. (300 - 360 ml) of liquid. Assemble the snickerdoodle cake by layering 2 tablespoons (30 ml) cinnamon vanilla cake batter into the bottom of the mug, followed by 1 teaspoon of cinnamon sugar. Repeat 2 more times, layering the cake batter topped with cinnamon sugar. The top layer of the mug dessert is the cinnamon sugar layer. Microwave the mug cake vanilla cake in the microwave for 60 - 90 seconds (1 - 1 ½ minutes). The mixture should puff up and resemble cake. If there is any liquid at the bottom or the cake seems underbaked, heat the mug cake in the microwave an additional 10 second increments until the cake is to your desired consistency. - Store: This mug cake recipe is designed to be single serve and to be eaten as soon as it is made. I do not recommend storing this snickerdoodle cake in a mug as the texture changes over time. In general mug cakes taste so much better right after it is made.

M’s Expert Tips
- Use separate mixing bowls. Normally mug cakes are made in the same mug as they are baked and served in. This is still possible if you don’t want to layer the cinnamon sugar in the cake. However, for this recipe, the cake batter and cinnamon sugar are mixed in separate bowls and layered in the mug.
- Mix in the suggested order. I love an easy one dish dessert. After trying a few different ways, I found whisking or mixing the wet ingredients first and then adding in the dry was the best and easiest way to make this fluffy cinnamon sugar filled mug cake.
- Mix the ingredients well. The cinnamon vanilla cake batter should be similar to a regular cake batter.
- Use the proper sized mug. Mug cakes need to be made in mug that are at least 10 - 12 oz. in capacity.
- Check the wattage on your microwave. If your microwave is below 1100, you may need to start at 60 seconds and add 20 - 30 seconds. If your microwave is above 1100, 60 seconds may be all that is needed.

You absolutely can. Preheat the oven to 350 F (177 C). Place the mugs or ramekins filled with the vanilla cake batter on a baking sheet. Bake the mug cakes for 10 - 15 minutes.
You can double the recipe, but use two mugs and microwave them separately. It’s such a quick and easy recipe, that you can still have a fabulous dessert in no time.
