I love using fresh strawberries for dessert recipes on the blog. My Strawberry Tiramisu, Strawberry Mousse, No Bake Strawberry Cheesecake and Strawberry Tres Leches are just a few of my favorite creamy strawberry dessert recipes. I am so excited to add this bright, fresh and creamy stuffed strawberries recipe to the blog. I know you’ll love this strawberries with cheesecake recipe. 

  • Super simple to make. Make these wonderfully easy deviled strawberries  in about 5 - 10 minutes with 5 ingredients. Then enjoy right away or later that day. 
  • The perfect fresh and simple dessert. Fresh strawberries are filled with creamy cream cheese filling. With all the best flavors of cheesecake and minimal ingredients, you will love this strawberry cream cheese desert.

Ingredients

This strawberry and cream cheese dessert needs only a handful of ingredients to make and you probably already have them in your pantry and fridge. Here’s what you will need to make these easy cheesecake strawberries.

Ingredients: Gather strawberries, cream cheese, powdered sugar, vanilla extract and graham crackers.

Substitutions 

Here are my recommended substitutions to make these easy deviled strawberries  if you need them.

  • Strawberries: Use large, fresh, ripe and sweet strawberries. Taste the strawberries to ensure they are sweet. 
  • Cream Cheese: These cheesecake filled strawberries are made with full fat Philadelphia cream cheese. It is important to use full fat versus reduced fat for this recipe. I personally love using Philadelphia for all my cheesecake based recipes. 
  • Powdered Sugar: I like using powdered sugar for no bake cheesecakes. The cornstarch in the powdered sugar helps to keep the filling stabilized. Feel free to use regular extra fine sugar instead. 
  • Vanilla Extract: This provides a lovely background flavor for the cheesecake filling. Omit if you don’t have this ingredient.
  • Graham Crackers: Feel free to use any cookie in place of the graham crackers.

How To Make

Learn how to make cheesecake stuffed strawberries in a few easy steps.

  1. Add the cream cheese to a large mixing bowl. Use a spoon or large flexible silicone spatula to smooth th cream cheese until it spread easily. Add the powdered sugar and vanilla extract to the bowl. Mix the ingredients together until smooth and well combined. Transfer the cheesecake filling into a piping bag fitted with a Wilton 1A tip. 
  2. Wash and pat dry the strawberries. Use a piping tip or a small paring knife to hull and create a cavity to hold the cheesecake filling. Place the graham crackers into to small plastic ziplock. Crush the graham crackers to a crumb consistency.
Pipe the cheesecake filling into the strawberries. If you like, create a decorative "swirl" on top of the strawberries. Sprinkle with the crushed graham crackers. Place the prepared cheesecake strawberries onto a large plate or small lined baking sheet. Repeat until all the strawberries are made. Enjoy right away or cover and chill the strawberries until ready to serve.

3. Pipe the cheesecake filling into the strawberries. If you like, create a decorative "swirl" on top of the strawberries. Sprinkle with the crushed graham crackers. Place the prepared cheesecake strawberries onto a large plate or small lined baking sheet. Repeat until all the strawberries are made. Enjoy right away or cover and chill the strawberries until ready to serve.

How To Make Ahead and Store

  • Make Ahead: These cheesecake strawberries can be prepared earlier in the day and enjoyed later in the day. Make the cream cheese filling up to 3 days in advance and keep stored in the fridge in an airtight container. Bring the cheesecake filling to room temperature before piping into the strawberries. 
  • Store: Store these cheesecake strawberries in an airtight container in the fridge for up to 2 - 3 days after making. 
  • Freeze: Freezing strawberries stuffed with cheesecake is not recommended. Freezing and thawing strawberries causes the strawberries to become mushy.

M’s Expert Tips

  • Use room temperature cream cheese. The cream cheese needs to be smooth in order to mix it with the powdered sugar and vanilla extract. Pull the cream cheese out and prepare the other ingredients while the cream cheese softens at room temperature. 
  • Use large, sweet, ripe strawberries. Try to find large red, ripened, but not overly ripened strawberries. They need to be soft enough to hull a space for the cheesecake filling, but not too soft that the strawberries will become mushy and fall apart while filling them. 
  • Use a piping bag or cookie scoops. Using a piping bag with a Wilton 1A tip to create the cavity for the filling and to also pipe the filling into the strawberries. 
  • Allow for the full amount of chilling time. A brief chilling time is recommended to help the cheesecake filling set. However, if you plan on enjoying the stuffed strawberries as soon as they are made, feel free to skip the chilling time. 
  • Drizzle or dip the prepared strawberries in chocolate. For extra special cheesecake stuffed strawberries, melt some chocolate and drizzle on top of the prepared strawberries or dip the strawberries in the melted chocolate.
