I love making quick and easy, filling and protein filled breakfasts that could easy double as a snack or even dessert. My Strawberry Chia Pudding, Peanut Butter Overnight Oats, Apple Cinnamon Overnight Oats, Blueberry Overnight Oats and Protein Overnight Oats are a few easy and filling breakfast recipes that I absolutely adore. This matcha chia pudding recipe is another healthy breakfast recipe I know you will love just as much as I do. 

  • Quick and healthy breakfast. This green tea chia pudding recipe takes about 5 minutes to assemble using a handful of simple ingredients. Simply mix the matcha and milk together to make the matcha milk, mix in the chia seeds and flavorings and allow the seeds to soak for a few hours. The result is a delicious, healthy and hearty breakfast you will love.
  • Perfect for meal prep. Chia matcha pudding is perfect for making at the beginning of the week and enjoying for a healthy, filling and delicious breakfast for the next 3 - 4 days.

Ingredients and Substitutions

This matcha chia seed recipe requires only a handful of basic pantry ingredients which makes them perfect for busy mornings. Here’s what you will need. 

  • Milk: Use any milk you like. Plant based milk also works well in this recipe if you would like to make this chia pudding vegan. For an extra boost of protein, use protein milk. 
  • Matcha Powder: In order to get the most vibrant green color and green tea taste, use a ceremonial grade green tea. 
  • Chia Seeds: Chia seeds create a thick and creamy consistency. 
  • Maple Syrup: Honey or agave work well to sweeten this chia seed pudding. 
  • Vanilla Extract and Salt: Both are used to enhance the flavors of the matcha pudding. I recommend using both.

How To Make

Learn how to make matcha chia pudding in a few easy steps.

  1. Pour milk into a large bowl. Top the bowl with a fine mesh strainer. Sift the matcha powder into the milk. Whisk until well combined, with no lumps of matcha and the matcha has formed a foamy layer at the top. 
  2. Add the chia seeds, vanilla, salt, and your sweetener of choice to the matcha milk. Whisk the matcha with the chia seeds, vanilla, salt and sweetener until well combined. Cover and chill the mixture in the fridge for 1 hour.
Once the strawberry chia pudding has set and thickened for 1 hour, transfer the mixture into your preferred serving dishes. Cover and return to the fridge for another 1 - 2 hours or for up to 5 days. Before serving, top with your preferred toppings and enjoy.

How To Make Ahead, Store and Serve

  • Make Ahead: Chia seed pudding was made for meal prep and make ahead preparation. Prepare the chia pudding as written in the recipe. Pour or scoop the green tea chia pudding into your preferred containers and store in the fridge until you are ready to eat. Top with your preferred toppings right before serving. 
  • Store: Place the matcha chia seed pudding in an airtight container for up to 5 days in the fridge. 
  • Serve: Top the chia seed pudding with your preferred toppings. I recommend adding adding a dollop of sweetened yogurt or whipped cream and fresh strawberries or other fresh berries. You can also add granola, a drizzle of nut butter, chopped nuts and/or shreds of coconut.

M’s Expert Tips

  • Use fresh chia seeds. In order for the chia pudding to set the best, make sure to use fresh chia seeds. Old chia seeds may not thicken as well as fresh ones. 
  • Blend the matcha milk well. In order to make the best matcha chia seed pudding, make sure to make the best blend of matcha with milk. Blend until no lumps of matcha remain. 
  • Stir and stir again. Once the matcha chia pudding is mixed together, chill the pudding for about 1 hour. Stir the pudding together once more to redistribute the chia seed pudding and chill another hour before enjoying. 
  • Add toppings before serving. Top is green tea chia pudding with your preferred toppings. I recommend adding adding a dollop of sweetened yogurt or whipped cream and fresh strawberries. You can also add granola, a drizzle of nut butter, chopped nuts and/or shreds of coconut.
