Why Should You Make This Recipe

I have several marshmallow treat recipes on the blog. My personal favorites at the moment are myMaple Tahini Rice Krispie Treats, Chocolate Covered Rice Krispie Treats, Chocolate Rice Krispie Treats  and Fruity Pebbles Treats. These Lucky Charms rice crispy treats are another fun twist on the nostalgic no bake marshmallow bars you know and love. 

  • They are quick, easy and fun to make. There’s nothing better than satisfying a dessert or snack craving as soon as possible with ingredients you already have on hand. These Lucky Charms rice krispies are made using 5 ingredients and take only 10 minutes to assemble. 
  • You love fun and colorful twists on nostalgic childhood treats. These Lucky Charms marshmallow treats are exactly the same as the beloved and iconic rice krispie treats, just more colorful. 
  • They’re a delicious no bake dessert. These marshmallow and cereal filled no bake bars make a great grab and go snack or easy dessert kids and adults will absolutely adore.

Ingredients

This Lucky Charms rice krispie treats recipe requires only 5 ingredients to make and you probably already have them in your house. Make sure you have these ingredients ready to go.

Gather Lucky Charms cereal, Rice Krispie cereal, mini marshmallows, butter, vanilla extract and salt.

Substitutions 

These Lucky Charms marshmallow treats are meant to be quick and easy, but sometimes you may not have everything on hand. If you need them, here are my recommended substitutions to make these charming treats. 

  • Rice Krispie Cereal: Feel free to use any rice cereal you like.
  • Lucky Charms Cereal: I recommend using a box of Lucky Charms Cereal rather than using a generic brand. However, you can use any colorful marshmallow filled cereal you like.
  • Unsalted Butter: You can use the same amount of salted butter as written in the recipe. Just omit the  ½ teaspoon salt added.
  • Vanilla Extract: This adds a lovely background flavor to the marshmallow treats. It’s highly recommended to use this, but it can be omitted if needed. 
  • Mini Marshmallows: This recipe for Lucky Charms treats uses exactly one 10 oz. bag of mini marshmallows. Feel free to use regular marshmallows if needed, but mini ones are recommended for the best Lucky Charms treats.

How To Make

Learn how to make Lucky Charms rice krispie treats in a few easy steps.

  1. Grease and line a 9 x 9 pan with wax paper or foil along the bottom and two sides of the pan. Scoop out 1 cup of Lucky Charms cereal. Remove the marshmallows from this cup to use as a topping once the treats are made. Measure out the remaining ingredients before starting on making the treats. In a large sauce pan or pot, melt the butter on low heat. Once all the butter has melted add in the mini marshmallows. Stir continuously over low heat until the marshmallows are mostly melted. 
  2. Once the marshmallows are mostly melted remove the pot from the heat. Stir in the vanilla extract and salt. Add the rice krispie and lucky charms cereal directly to the pan if possible. If not, make sure all the cereal is in a large bowl and pour the melted marshmallows directly into the bowl of cereal. Quickly and carefully stir the cereal and gooey marshmallows together until well combined.
Evenly scoop the soft and gooey Lucky Charms cereal treats into the prepared pan. Gently press the lucky charm rice crispy treats into place. Top the treats with the reserved Lucky Charms marshmallows. Allow the treats to set for at least 30 minutes. Slice and enjoy.

How To Make Ahead, Store, Freeze and Thaw

  • Make Ahead: Prepare the Lucky Charms treats according to the recipe directions. Keep the marshmallow treats in the pan, fully wrap the pan in plastic wrap and store at room temperature for up to 1 - 2 days before serving for the best tasting treats. 
  • Store: These lucky charms crispy treats store well in an airtight container at room temperature for up to one week.
  • Freeze and Thaw: Prepare the Lucky Charms marshmallow treats according to the recipe directions. Cut and wrap each individual square in wax or plastic wrap. Place each of the squares in an airtight, freezer proof container. Store in the freezer for up to 6 weeks. To thaw, remove the treats from the freezer to thaw until room temperature. Warm the treats in the microwave for that “fresh from the oven” taste.

M’s Expert Tips

  • Reserve some marshmallows for topping. The charming marshmallows found in Lucky Charms cereal will start to melt into the warm mixture. For this reason, I recommend reserving some of the marshmallows from the cereal to top the bars.
  • Mini marshmallows are the best. When possible, I recommend using mini marshmallows versus large or regular size marshmallows. I find these marshmallows melt the most evenly and make the perfect Lucky Charms rice crispy treats.  
  • Gently melt the marshmallows in the butter over medium - low heat. Stir frequently and just until the marshmallows and butter form a smooth mixture. Avoid the temptation to over mix or rush this process. Doing so can create hard marshmallow treats. 
  • Don’t overmix. Stir the cereal and gooey marshmallows together until the cereal is fully coated. Don’t overmix or the Lucky Charms marshmallows will start to melt into the mixture. 
  • Prepare the pan. Lightly grease the pan with cooking spray or butter and line the pan with wax paper or foil before transferring cereal and marshmallow mixture into the pan. Press the mixture gently into the pan. This needs to be just enough to get them to stick together.

FAQs

Can I use marshmallow fluff, marshmallow creme or marshmallow cream?

Technically yes, but the texture will be very different. If you opt to use marshmallow creme, the lucky charms marshmallow treats will come apart very easily and the overall texture won’t be as gooey as traditional rice krispie treats.

Can I make my rice krispie treats with all Lucky Charms cereal?

Yes, feel free to swap all the rice krispie cereal with Lucky Charms cereal. However, I love using a mix of both cereals to make the best Lucky Charms rice krispies treats. 

Why are my Lucky Charm treats hard as a rock?

This typically happens when the marshmallows are melted quickly over high heat or when left on the heat source too long. Melt the marshmallows low, slow and only as long as needed for the marshmallows to almost fully melt.

Can you make Lucky Charm crispy treats the day before?

These colorful marshmallow bars are gooiest and are best enjoyed the day they are made. However, if they are made in advance (no more than a day before), fully cover the pan with plastic wrap to prevent air from drying out the treats.

  • 1 9 x 9 (23 cm) pan
  • 1 sheet wax paper to line the pan

Ingredients
  

  • 6 tablespoons (87 g) unsalted butter
  • 10 oz. mini marshmallows
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 cups (144 g) Lucky Charms cereal, divided
  • 2 cup (53 g) Rice Krispie cereal

Instructions
 

  • Grease and line a 9 x 9 pan with wax paper or foil along the bottom and two sides of the pan.
    Scoop out 1 cup (36 g) of Lucky Charms cereal. Remove the marshmallows from this cup to use as a topping once the treats are made. Add the remainin cereal to a large bowl meant to hold the rest of the cereal to make the bars. Measure out the remaining ingredients before starting on making the treats.
  • In a large sauce pan or pot, melt the butter on low heat. Once all the butter has melted add in the mini marshmallows. Stir continuously over low heat until the marshmallows are mostly melted.
    6 tablespoons (87 g) unsalted butter, 10 oz. mini marshmallows
  • Once the marshmallows are mostly melted remove the pot from the heat. Stir in the vanilla extract and salt. Add the rice krispie and lucky charms cereal directly to the pan if possible.
    If not, make sure all the cereal is in a large bowl and pour the melted marshmallows directly into the bowl of cereal. Quickly and carefully stir the cereal and gooey marshmallows together until well combined.
    1 teaspoon vanilla extract , ¼ teaspoon salt, 4 cups (144 g) Lucky Charms cereal, divided , 2 cup (53 g) Rice Krispie cereal
  • Evenly scoop the soft and gooey Lucky Charms cereal treats into the prepared pan. Gently press the lucky charm rice crispy treats into place. 
    Top the treats with the reserved Lucky Charms marshmallows. Allow the treats to set for at least 30 minutes. Slice and enjoy.
