Substitutions
Here are my recommended substitutions to make these glazed strawberries super simple.
- Fresh Strawberries: If you can’t find fresh strawberries, an equal amount of frozen strawberries works well.
- Granulated Sugar: This is used to sweeten and thicken the strawberry glaze. Use maple sugar for a refined sugar free alternative.
- Cornstarch: This is used to thicken the strawberry sauce. Use double the amount of tapioca flour in place of the cornstarch.
- Lemon Juice: Use an equal amount of water.
- Vanilla Extract: This provides a lovely background flavor to the strawberry topping.
How To Make
Learn how to make strawberry glaze in a few easy steps.
- Wash, de-steam and slice fresh strawberries in half or quarters. Reserve ½ of the berries in a mixing bowl for later. Place the remaining half in a blender or food processor. Blend until fully puréed.
- Pour the strawberry purée, cornstarch, lemon juice and sugar into a sauce pan. Mix well to combine. Heat over medium-high heat to a gentle boil, then reduce to low-medium heat until thickened. This takes a few minutes. To test, dip a spoon into the jam, if the back remains coated in the jam, it is ready. Remove from the heat and stir in the vanilla extract until well combined.
- Pour the hot strawberry glaze through a mesh strainer into the bowl with the fresh berries. Stir the fresh berries with the warm strawberry glaze until the berries are fully coated. Cool to room temperature or chill before using as a topping.
How To Serve, Store, Freeze and Thaw
- Serve this strawberry glaze topping on any dessert you like! It would make the perfect topping for my Philadelphia No Bake Cheesecake or Almond Flour Chocolate Cake.
- Store leftover strawberry topping: Once the glazed strawberry mixture has cooled completely to room temperature, transfer to an airtight container to be stored in the fridge for up to 3 - 4 days. When you are ready to use in a recipe, gently warm the strawberry sauce in 15 second intervals in the microwave until room temperature. You can also use this as a cold topping depending on the recipe.
M’s Expert Tips
- Coat the back of a spoon. The thickness of this glaze is mostly a personal preference, but a good measure is to coat the back of a spoon. If the glaze easily and fully coats the back of a spoon, its thick enough for the glaze.
- Use a mesh strainer. Pouring the hot strawberry glaze through the strainer removes many of the seeds, giving the sauce a smoother texture.
- Pour the hot glaze over the fresh strawberries. This helps to soften the fresh berries just a bit. If the glaze has cooled to room temperature too quickly, simply transfer the entire mixture back to the sauce pan and warm over low heat until the fresh berries are to the texture you like.
- Fully cool before using a topping. Depending on the recipe, the glazed strawberries should be cooled to room temperature before using as a topping.
