Here are my recommended substitutions to make this pineapple sorbet if you need them.
- Pineapple: I prefer using frozen pineapple for this whipped fruit recipe. This cuts down on the freezing time and provides a bit more structure for piping the whipped pineapple if you want to get the signature Disney dole whip appearance. If you prefer the taste and sweetness of fresh pineapple, make sure to freeze the fruit overnight and then make the recipe.
- Powdered Sugar: This is used to sweeten the pineapple sorbet. Feel free to use your preferred sweetener or powdered sugar alternative such as Lakanto. I love maple sugar when I want to make this creamy, non dairy, frozen pineapple dessert refined sugar free. If you choose to use a liquid sweetener, I recommend a thicker one such as honey.
- Coconut Cream: The disney recipe uses a form of coconut cream to make their famous Dole pineapple whip. Cold coconut cream is recommended for this pineapple whip recipe. Feel free to use another full fat cream or even ice cream if you prefer.
- Lemon Juice: This brings a bit of brightness to the frozen pineapple treat. Feel free to use a splash of lime juice or even pineapple juice.

Variations
- Dole Pineapple Whip Ice Cream: To make this recipe without coconut cream, simply swap the cream for vanilla ice cream. Use the same amount of ice cream (½ cup) as coconut cream. Instead of lemon juice, use pineapple juice. Follow the rest of the recipe as written.
- Pineapple Whip with Banana: Use the same recipe as written and add 1 sliced and frozen banana to the mixture. Blend at the same time as the pineapple. Use pineapple juice instead of lemon juice. Adding a frozen banana adds more richness, creaminess and thickness.
- Vanilla Extract: If you’d like to add another layer of flavor to complement both the pineapple and the coconut cream, use ½ teaspoon of vanilla extract. Add at the same time as the other liquid ingredients.

- Grab a high speed blender or food processor. Add the frozen pineapple, coconut cream, powdered sugar and lemon juice to the blender or food processor. Pulse 5 - 10 times to incorporate the ingredients. Then process the mixture together until smooth and well combined. Stop and scrape the food processor or blender as needed. The texture will transform form icy clumps of pineapple to smooth and creamy pineapple sorbet. If needed, add more sugar, cream or lemon juice to taste.
- Once the whipped pineapple is creamy and to your preferred taste, scoop and serve immediately or transfer the mixture to a freezer safe and airtight container.To get that signature Dinsey Dole whip swirl, freeze the mixture for about 20 - 30 minutes. Then scoop the mixture into a piping bag fitted with a 1M piping tip. Pipe the whipped pineapple into a serving glass or cup and enjoy. To enjoy the swirls a bit longer, pipe the frozen whip cream pineapple into a serving dish and return to the freezer for another 30 minutes.
How To Store and Serve
- Store: This creamy and decadent dairy free pineapple sorbet stores well in airtight and freezer proof container in the freezer for up to 2 months.
- Serve: Set the homemade pineapple ice cream out at room temperature for 5 minutes, serve and enjoy.

M’s Expert Tips
- If needed, make this dole whip pineapple dessert in batches. If the volume of the recipe ingredients exceeds the capacity of the food processor, the pineapple whip should be made in batches. Make sure to adjust the sugar, coconut cream and lemon juice for the amount of pineapples for each batch. For example, if only half of the pineapple will fit the capacity of the food process or blender, add only half of the other ingredients to the first batch and make the frozen pineapple sorbet in two batches.
- Chill for the best swirl. This whipped pineapple dessert is the consistency of soft serve right after blending. For the best swirl, transfer the mixture to the freezer until it has thickened a bit, 30 - 60 minutes of freeze time should be fine. Then scoop the mixture into a piping back fitted with a star piping tip and swirl into a serving dish.
