This Fruity Pebbles ice cream needs only a handful of ingredients to make and you probably already have them in your pantry and fridge! Here’s what you will need to make this creamy and decadent treat.
Gather Fruity Pebbles cereal, heavy whipping cream, sweetened condensed milk, orange juice, lemon juice and vanilla extract.
Substitutions
Here are my recommended substitutions to make this fruity cereal ice cream if you need them.
- Heavy Cream: This is an essential ingredient to the structure and texture of ice cream when it’s made without an ice cream mixer. Heavy cream usually whips to amount twice the amount.
- Sweetened Condensed Milk: This is another essential ingredient for homemade ice cream when not using an ice cream maker.
- Vanilla Extract: This provides a lovely background flavor for the ice cream.
- Fruity Pebbles: Feel free to use any fruity cereal you like. Trix, Fruit Loops, or even Cocoa Pebbles.
- Fruit Juices: A mixture of lemon and orange juice are used to enhance the fruity flavor of the ice cream. Omit if you don’t have these ingredients. Alternatively, you can use 1 teaspoon (5 ml) lemon extract and orange extract.
Variations
Layer with Strawberry Sauce: The store bought Fruity Pebbles Cereal has swirls of strawberry sauce. If you would like to sandwich each layer of this ice cream with strawberry sauce, prepare the recipe as written. Once it’s time to transfer the light, milkshake like ice cream into a container to freeze, swirl in the strawberry sauce before layering more ice cream. I love using my homemade strawberry glaze, minus the sliced strawberries.
Fruity Pebbles with Marshmallow: Swirl 4 oz. marshmallow fluff into the fruity pebble ice cream mixture.
Fruity Pebbles Ice Cream Sandwiches: Grab your favorite soft sugar cookies, scoop this fruity pebbles ice cream in the middle, top with another cookie, roll the outer edges in a layer of Fruity Pebbles cereal, freeze for 20- 30 minutes to set and enjoy!
Pebbles Ice Cream Cones: Melt white chocolate (about 1 oz. per cone), roll the top of a waffle or sugar cone in the white chocolate, roll in fruity pebbles cereal and allow the white chocolate on the cone to set in the fridge for about 15 - 20 minutes.
How To Make
Let me show you how to make homemade fruity pebbles ice cream in a few easy steps.
- Pour the heavy cream into a mixing bowl with the Fruity Pebbles cereal. Stir well to combine. Transfer the mixture to the fridge for 20 minutes to infuse the cereal flavor into the heavy cream. Stir after 10 minutes and once again at the end of the 20 minutes. For a smoother texture, strain the heavy cream through a mesh colander. I like to leave the cereal in the mixture. Beat on medium speed to medium peaks with a whisk attachment (or beaters).
- In a separate bowl mix the sweetened condensed milk, lemon juice, orange juice, vanilla extract and salt until well combined. Pour the sweetened mixture into the whipped cereal heavy cream and mix on low until combined. The ice cream will look like a melted milkshake.
- Layer the homemade cereal milk ice cream with Fruity Pebbles cereal into a freezer proof container. I like to do two layers of homemade ice cream topped with a sprinkle of fruity cereal.
- Transfer the Fruity Pebbles ice cream to the freezer to set for 1-2 hours. Then cover the entire container in plastic wrap and a layer of foil. Freeze the ice cream for at least 8 hours, but preferably overnight. Pull the ice cream out to sit at room temperature for about 5 minutes, scoop and enjoy!
How To Store
Store the creamy and decadent fruity pebbles ice cream in an airtight and freezer proof container in the freezer for up to 2 months.
M’s Expert Tips
- Strain the heavy cream from the cereal for a smooth texture, leave in the for most fruity cereal flavor. This comes down to a personal preference. I love leaving the cereal in the heavy cream.
- Make sure the heavy cream is whipped to medium peaks. This is essential setting the fruity cereal milk ice cream base. Heavy cream has been whipped to medium peaks when the whipped cream mostly stands up and folds down slightly when the beater is lifted out of the bowl.
- Make sure to chill the ice cream for at least 6 - 8 hours: For the best cookies and cream ice cream, do not skimp on the freezer time.
FAQs

- 2 tbsp (30 ml) orange juice
- 2 tbsp (30 ml) lemon juice
- 1 tsp (5 ml) vanilla extract
- ¼ tsp salt
